And the same to you and everyone!! Brian is Irish and he wants me to make corn beef and cabbage all that goes with it which I agreed to do although I have never made it before. We can't actually have it today because it is lent although he says there is some dispensation..... Anyway, I bought everything, cabbage, potatoes, carrots, onions, corned beef and Irish soda bread and I am going to make it tomorrow. I probably should not say this and sorry for ruining anyone's corn beef and cabbage meal but the raw corned beef so totally grosses me. I am just going to plop it in the pan without touching or looking!!

Did you get the canned ground stuff? If so, I totally agree, blech. Corned Beef is one of the few things I know how to make from scratch. You can buy the beef roast already prepared (corned so to speak) so you just have to pop it in the oven like any other roast or in the crock pot if you are lazy like me. It is soooooo much better than the alternatives.
Happy St. Pats everyone. Can't wait to get out and have some green beer.

Yeah, an oldie but a goodie.... Two men were sitting next to each other at a bar. After a while, one guy looks at the other and says, "I can't help but think, from listening to you, that you're from Ireland."
The other guy responds proudly, "Yes, that I am!"
The first guy says, "So am I! And where about from Ireland might you be?"
The other guy answers, "I'm from Dublin , I am."
The first guy responds, "Sure and begora, and so am I! And what street did you live on in Dublin ?"
The other guy says, "A lovely little area it was, I lived on McCleary Street in the old central part of town."
The first guy says, "Faith & it's a small world, so did I! So did I!! And to what school would you have been going?"
The other guy answers, "Well now, I went to St. Mary's of course."
The first guy gets really excited and says, "And so did I. Tell me, what year did you graduate?"
The other guy answers, "Well, now, let's see, I graduated in 1964."
The first guy exclaims, "The Good Lord must be smiling down upon us! I can hardly believe our good luck at winding up in the same bar tonight."
Can you believe it, I graduated from St. Mary's in 1964 my own self."
About this time, Vicky walks into the bar, sits down, and orders a beer.
Brian, the bartender, walks over to Vicky, shaking his head & mutters, "It's going to be a long night tonight!!!!"
Vicky asks, "Why do you say that, Brian?"
"The Murphy twins are drunk again."

Well St. Patty's has always been a big holiday for our family. This was the first year I went all out. It's right up there with Christmas since we are mostly Irish. My aunt rented a limo. They picked me up at 6:30. She gave me these shamrock earrings that flashed and a shamrock necklace that lit up. I got a green lei. (sp?) Wore my "Everyone Loves an Irish Girl" t-shirt (which I wear year round ) I wish I had pictures of us! I think we were so busy being crazy we forgot to take pictures. People gave me a bunch of mardi gras necklaces with shamrocks dangling from them. NO I didn't do anything to get them! ;D I'm a good girl. We went to this Irish Restaurant that we go to every year. They put this HUGE tent outside in the parking lot. It was freezing out but they put heaters inside. I couldn't beleive how warm it actually was inside the tent! We always used to stay inside the restaurant so the tent was a new experience for me. It was fun! They have bag pipers come out and play in the building and they move out to the tent back and fourth all day. I know one of the guys who played the snare drum. I hadn't seen him in a couple years so it was kinda cool to see him. Especially in a kilt! But I've seen him wear that a few times. I just love holidays when you get to run into so many people you haven't seen in so long. In anycase... I had a little more fun that I thought. I ended up throwing up by 11:30. I was completely fine and wasn't really even feeling it until we got in the limo to go to the bar where my friend was working. It all hit me at once out of no where. I think I would have been fine though if we hadn't gotten in the limo. In bed and sleeping by 12:30. But it was a great time!

Ha Ha Richard!! That was cute. And Brooke, I am glad you had such a good time minus the getting sick of course!! I never ended up making the corned beef last night but am making it right now. And despite my initial reaction to the raw meat, it actually smells fantastic cooking. I got a recipe on the Internet and added peppercorns and garlic and other stuff and it really smells good. One mistake I made... I think it was a mistake... was that I trimmed all of the fat off before cooking. Oh well. Who needs more fat. I am still uncertain as to whether I should cook everything together or do the vegetables in a separate pot. So if any of you Irish folk are out there right now, which is better? I have to decide soon.
